
Açaí na Tigela
Açaí comes from the Amazon rainforest, from the state of Pará, where indigenous and riverside communities have eaten it for centuries, but traditionally in its savory, unsweetened form, alongside fish and cassava flour, as a staple food, not a dessert. The sweet version, served cold in a bowl with granola and fruit, only emerged in the 1980s and 1990s, in Rio de Janeiro, among surfers looking for a calorie-dense, energizing snack after training. Since then, açaí na tigela has become a global symbol of healthy eating, exported far beyond its humble Amazonian origins. The thick consistency remains the mark of quality — an açaí that flows easily out of the bowl is almost always a sign it was diluted with too much water or ice, a common practice in cheap commercial versions, far from the technical standard of the authentic, thick version.

Ingredients 4 servings
- 400g frozen açaí pulp, unsweetened
- 2 bananas, one for blending, one sliced for topping
- 100ml apple juice or guaraná soda, a splash
- Granola, for topping
- Sliced strawberries, for topping
- Honey or condensed milk, a drizzle, optional
How to make it
- 1BLEND THE BASE: break the frozen açaí pulp into chunks, blend with one banana and a small splash of liquid, just enough to get it moving, keeping the mixture thick, almost like soft-serve, not a thin smoothie.
- 2CHECK THE CONSISTENCY: stop blending as soon as it's smooth; over-blending or adding too much liquid makes it too thin.
- 3ASSEMBLE THE BOWL: pour the thick açaí into a bowl.
- 4TOP IT: arrange the granola, sliced banana and strawberries on top.
- 5DRIZZLE: finish with a drizzle of honey or condensed milk, if using.
- 6SERVE: serve immediately with a spoon, while still very cold.
