Key Lime Pie is closely tied to the Florida Keys islands, particularly Key West, where the small green limes known as 'Key limes' were widely cultivated before a 1926 hurricane destroyed most of the orchards, making the variety rare and expensive today in the rest of the country. The absence of reliable refrigeration in the isolated island area in the early twentieth century required a recipe based on condensed milk, an ingredient that needed no refrigeration and was easy to transport on ships. The exact origin remains disputed — some attribute it to local fishermen, who combined ingredients readily available on their boats, others to cooks in wealthy households who wintered in Key West. In 2006, the state of Florida declared Key Lime Pie the official state dessert, cementing its status as a regional culinary symbol, and the city of Key West holds an annual festival dedicated exclusively to this dessert.

  • 250 ml heavy cream
  • 2 tbsp powdered sugar (for whipped cream)
  • Grated lime zest for garnish

How to make it

  1. 1The finely ground graham crackers mix with melted butter and sugar, forming a moist mixture resembling coarse sand.
  2. 2The mixture is pressed evenly onto the bottom and sides of a pie pan, using the bottom of a glass to compact it well.
  3. 3The crust bakes in the oven at one hundred seventy-five degrees for eight minutes, until lightly golden, then is left to cool completely.
  4. 4The egg yolks are beaten vigorously in a bowl, until they lighten in color and become slightly foamy.
  5. 5Sweetened condensed milk is poured over the yolks, stirring continuously until the mixture becomes smooth and thick.
  6. 6Key lime juice is added gradually, stirring constantly — the citrus acid will visibly thicken the mixture within minutes, a normal phenomenon specific to the recipe.
  7. 7The filling is poured over the cooled crust, and the pie bakes again at one hundred sixty degrees for fifteen minutes, until the filling sets at the edges but remains slightly wobbly in the center.
