Fairy Bread

Fairy Bread is a very simple but deeply beloved snack in Australian childhood culture — slices of white bread spread with butter and generously covered with coloured sugar sprinkles, cut into triangles. Its precise origins are unclear, but recipes and mentions of the dish appear in Australian publications as far back as the 1920s, and the name evokes a kind of simple magic fitting for children, as if the sprinkles had been scattered by fairies. Although it seems like just a trivial combination of ingredients, Fairy Bread has become a touching symbol of Australian childhood, present at almost every birthday party across generations. Its simplicity — no complicated recipe, just butter and sprinkles — makes it perfect for children who want to help with party preparations, and many Australian adults hold strong nostalgic memories tied to this colourful childhood treat.

Kids' party staple

A must-have at birthday parties

Ingredients 4 servings

  • 8 slices soft white bread
  • 100 g soft butter, at room temperature
  • 100 g coloured sugar sprinkles
  • 1 tsp icing sugar, optional
  • 1 tsp vanilla extract, optional
  • A pinch of salt
  • Baking paper, for serving
  • 1 tbsp extra butter, if needed
  • A large plate for arranging

How to make it

  1. 1Lay the bread slices side by side on a clean work surface.
  2. 2Soften the butter for a few seconds if it's too hard, so it spreads easily without tearing the bread.
  3. 3Spread a generous, even layer of butter on each slice, going right to the edges so the sprinkles stick everywhere.
  4. 4While the butter is still soft, immediately scatter a thick layer of coloured sprinkles, fully covering the surface of each slice.
  5. 5Press the sprinkles gently with the heel of your hand or a spatula, to make sure they adhere well to the butter.
  6. 6Cut each slice into two or four triangles, using a sharp knife with one firm motion to avoid scattering the sprinkles.
  7. 7Arrange the triangles on a large plate, points facing outward, in a colourful pattern, and serve immediately while the bread is still fresh.
