Anzac biscuits are a sweet Australian snack deeply tied to military history, the name being an acronym for the Australian and New Zealand Army Corps. Popular legend holds that these biscuits were sent to soldiers at the front during the First World War by their wives and mothers back home, since the egg-free recipe held up well over long sea transport without spoiling. Although modern historical research suggests many biscuits of this type already circulated before the war under other names, the emotional connection to Anzac soldiers has remained deeply rooted in Australian and New Zealand culture. Today, the name "Anzac" for any commercial product is legally protected in Australia, and the biscuits remain a fixture of Anzac Day commemorations on 25 April, often baked at home as a family gesture of respect.

Ingredients 4 servings
- 100 g rolled oats
- 100 g flour
- 75 g desiccated coconut
- 100 g sugar
- 100 g butter
- 2 tbsp golden syrup
- 1/2 tsp baking soda
- 2 tbsp hot water
- A pinch of salt
How to make it
- 1Preheat the oven to 160°C and line two baking trays with paper.
- 2Mix the rolled oats, flour, coconut, sugar and salt in a large bowl.
- 3Melt the butter and golden syrup together in a small saucepan over low heat, stirring occasionally.
- 4Dissolve the baking soda in the hot water, then quickly add it to the melted butter mixture — it will foam slightly.
- 5Pour the liquid over the dry ingredients and mix well until a firm, even dough forms.
- 6Shape small balls of dough, about walnut-sized, place them on the trays with space between them and flatten gently with the heel of your hand.
- 7Bake for 12-15 minutes, until golden, then let them firm up on the tray for a few minutes before moving to a rack to cool completely.
