Gołąbki
Gołąbki — literally "little pigeons" — got their name not from their appearance but from a 17th-century legend about King John III Sobieski, who supposedly asked his subjects to find a dish that would stretch meat supplies during a siege; the resulting small cabbage rolls with less meat were said to resemble the pigeons the Ottoman army used as messengers. The story is likely a later folk tale, but the name stuck, and the dish became a pillar of Polish family cooking, especially on Sundays. The key technique is the cooking balance: the rice must be only partly cooked before going into the roll, or it turns to mush during the long braise, and the cabbage leaves must be blanched gradually, one at a time, removed as they soften rather than all at once, so the more delicate inner leaves don't tear.

The cabbage leaves are blanched one at a time in a pot of boiling water, until pliable enough to roll without tearing.
Rice cooked only halfway in the filling
The rice is partly cooked before mixing with the meat, since it finishes cooking during the final braise.

The rolls simmer slowly under sauce, soaking up flavor instead of drying out.
A recipe passed down through generations
Every Polish family has its own version, often rolled by several hands in the kitchen at once.
Ingredients 4 servings
- 1 large head cabbage, whole
- 300g short-grain rice
- 500g ground beef and pork mix
- 1 large onion, finely chopped
- 1 egg
- Salt and pepper, to taste
- 1 tbsp sweet paprika
- 500ml tomato sauce
- 250ml beef broth
- 2 tbsp butter
- Sour cream, to serve
How to make it
- 1BLANCH THE CABBAGE: Remove the core, boil the whole cabbage 2-3 minutes in boiling water, then peel off the outer leaves as they soften, repeating the process until you're left with small inner leaves.
- 2PAR-COOK THE RICE: Boil the rice in salted water for only 10 minutes, half the normal cooking time, then drain and let it cool.
- 3MIX THE FILLING: Combine the ground meat, the par-cooked rice, onion, egg, salt, pepper and paprika in a bowl, mixing well.
- 4ROLL THE CABBAGE ROLLS: Cut out the thick rib from each leaf, place a spoonful of filling at the base, fold the sides in and roll up tightly.
- 5ARRANGE IN THE POT: Place the rolls seam-side down in a large pot or Dutch oven, packed closely together.
- 6POUR THE SAUCE: Mix the tomato sauce with the beef broth, pour over the rolls until almost fully covered, then dot the top with butter.
- 7BRAISE: Cover and let simmer over low heat 1-1.5 hours, until the cabbage is very tender; serve hot, with sour cream on top.
