Poronkäristys

Poronkäristys is considered one of the few truly authentic Finnish dishes, coming directly from the cuisine of the Sami, the indigenous people of Lapland, who have herded reindeer for centuries and developed techniques to use every part of the animal. The reindeer are allowed to graze freely on wild lichen pastures, which gives the meat a distinct flavor, wilder than beef but less intense than venison. The technique of slicing the meat extremely thin — so thin it fries in just a few minutes — was historically essential for saving fuel in the harsh northern climate, where firewood was precious. Today, the dish appears on restaurant menus across Finland, often served exactly as the Sami traditionally ate it, with mashed potatoes and lingonberries, for a balance of salty and sweet-tart.

Ingredients 4 servings

  • 600g reindeer meat, frozen, sliced paper-thin (or beef tenderloin as a substitute)
  • 3 tbsp butter
  • 1 small onion, thinly sliced
  • 250ml beef broth
  • Salt and black pepper, generously
  • 1 sprig fresh thyme
  • Mashed potatoes, to serve
  • Lingonberry jam, to serve
  • Pickled cucumbers, to serve

How to make it

  1. 1PREPARE THE MEAT: If using a whole cut, freeze it for a few hours, then slice it as thin as you can with a very sharp knife or a slicer; the meat should be almost translucent.
  2. 2SAUTÉ THE ONION: Melt part of the butter in a large pan over medium heat, sauté the onion 3-4 minutes, until translucent, then set it aside.
  3. 3HEAT THE PAN: Add the rest of the butter to the pan, raise the heat to high, until the butter just starts to foam.
  4. 4FRY THE MEAT: Add the meat slices in small batches, without crowding the pan, frying them just 1-2 minutes, stirring constantly, until browned at the edges but still pink inside.
  5. 5POUR IN THE BROTH: Return the onion to the pan, pour in the beef broth, add the thyme, salt and pepper, then let it simmer 2-3 minutes, until slightly reduced and the meat stays tender.
  6. 6CHECK THE CONSISTENCY: The sauce should stay thin, not thickened, just enough to coat the meat.
  7. 7SERVE: Serve immediately, hot, alongside mashed potatoes, lingonberry jam and pickled cucumbers.
