Mämmi

Mämmi is the traditional Finnish rye pudding, eaten almost exclusively at Easter, a recipe with medieval roots that reflects the ingenuity of Nordic cooking in extracting natural sweetness from rye malt without relying on large amounts of added sugar. Its dark brown, almost black colour and dense, almost gelatinous texture give it a distinctive look that often surprises visitors who have never seen this dessert. Traditionally, mämmi was baked in small boxes made of birch bark, which added a subtle woody aroma note and helped regulate moisture during the long baking. Although most modern production now uses cardboard boxes for convenience, the sweet-bitter, faintly smoky-birch taste remains strongly associated with Easter celebrations in Finland, and many Finns hold ambivalent childhood memories of this strange-looking but deeply cherished dessert.

Ingredients 4 servings

  • 300 g ground rye malt
  • 400 g rye flour
  • 100 g wheat flour
  • 1.5 litres water
  • 1 tsp grated orange zest
  • 1/2 tsp salt
  • 3 tbsp molasses
  • Sweet cream for serving
  • Sugar for serving

How to make it

  1. 1Mix half the rye flour with the hot water in a large vessel, forming a thick paste, then let it cool to room temperature.
  2. 2Add the ground rye malt over the paste and mix well, then let the mixture rest for 3-4 hours in a warm place, so the malt enzymes convert the starch into natural sugars.
  3. 3Gently heat the mixture on the stove, without boiling, stirring constantly, until it tastes sweet and takes on a darker colour.
  4. 4Add the remaining rye flour, wheat flour, orange zest and salt, mixing until fully combined.
  5. 5Pour the mixture into a deep greased tray, leaving room for it to expand during baking.
  6. 6Bake at 125°C for 5-6 hours, at very low heat, until the pudding turns dark brown and takes on a dense, gel-like consistency.
  7. 7Stir in the molasses on top during the last hour of baking for extra colour and flavour.
  8. 8Let it cool completely, then refrigerate overnight before serving cold, with sweet cream and a sprinkle of sugar on top.
