
Bambalouni
Bambalouni is the culinary symbol of Tunisian summer, a simple, almost rustic doughnut whose popular origin is linked to Italian influences brought by Sicilian communities long settled on the Tunisian coast. Unlike many elaborate Tunisian sweets layered with nuts and complex syrups, Bambalouni stays deliberately minimalist: batter, hot oil, and sugar, nothing else. Along the coast from Sidi Bou Said to Hammamet, street vendors fry the doughnuts to order, right on the beach or the seaside promenade, and their warm, sweet smell is inseparably tied to the vacation memories of many generations of Tunisians. They are eaten immediately, hot, bitten straight from the paper they are wrapped in, with no cutlery and no ceremony.
Beachside snack
Sold fresh and warm right by the sea, from stalls and carts that fill the coastal air with their aroma from morning until evening.
Egg-free batter
A loose, yeast-leavened batter is poured by hand straight into hot oil, forming irregular rings that are fluffy on the inside.
Plain, generous sugar
The only traditional finish is a thick layer of granulated sugar sprinkled on while the doughnuts are still hot, no glaze or filling.
Summer specialty
Found almost exclusively along the Tunisian coast in the warm months, tied closely to the beach, vacations, and seaside sunsets.

- 500 g flour
- 10 g dry yeast
- 1 tsp sugar
- 1 tsp salt
- 400 ml lukewarm water
- 1 tbsp oil
- Oil for frying (generous amount)
- 150 g granulated sugar (for coating)
- 1 tsp grated lemon zest
How to make it
- 1The yeast is dissolved in lukewarm water with a teaspoon of sugar and left for five minutes until it foams on top.
- 2The flour is mixed with salt in a large bowl, then the yeast mixture and oil are poured in, kneaded by hand or with a wooden spoon.
- 3The resulting batter is intentionally loose, closer to a thick pancake batter than a classic bread dough.
- 4The bowl is covered with a towel and left to rise in a warm spot for an hour, until doubled in volume.
- 5Oil is heated well in a deep pan, and a wetted handful of batter is taken at a time, forming irregular rings directly over the hot oil.
- 6Each doughnut fries a few minutes per side, until it turns a deep golden color and puffs up fluffy on the inside.
- 7The hot doughnuts are lifted onto paper towels, then immediately rolled in granulated sugar mixed with grated lemon zest while still hot.
