
Romanian Potato Moussaka
Potato musaca is the everyday dish of Romanian home cooking, born from a local adaptation of a large family of similar dishes across southeastern Europe — the Romanian version stands out for using almost exclusively potatoes as the base layer, instead of the eggplant more common in other regional kitchens. It's the dish most families cook from whatever is already in the pantry, with no special ingredients required. What separates a successful musaca from a watery, soggy one is pre-frying the potatoes: raw slices placed straight into the dish release too much moisture during baking and turn the topping layer into a puddle instead of a firm crust. Likewise, the meat has to be cooked separately until all its liquid has evaporated, otherwise it adds its own extra moisture to the layers. A musaca cut immediately, while still hot, falls apart on the plate — a few minutes of cooling is what lets the egg topping firm up enough to hold the layers together when sliced.

Ingredients 6 servings
- 1.2kg potatoes, peeled and sliced into thin rounds
- 500g mixed pork and beef mince
- 1 large onion, finely chopped
- 2 tbsp oil, plus extra for frying the potatoes
- Salt and pepper, to taste
- 1 tsp sweet paprika
- 3 eggs
- 200ml sour cream
- 100ml milk
- 50g grated cheese
How to make it
- 1PRE-FRY THE POTATOES: heat a little oil in a large pan over medium heat and fry the potato rounds in batches, 2-3 minutes per side, just until lightly golden, not fully cooked through.
- 2Set them on paper towel.
- 3COOK THE MEAT: in the same pan, cook the chopped onion for 3-4 minutes, until softened, then add the minced meat and brown it well, breaking it up with a spoon, 8-10 minutes, until all the moisture has evaporated.
- 4Season with salt, pepper and paprika.
- 5MAKE THE TOPPING: whisk the eggs with the sour cream, milk, salt and pepper in a bowl, until smooth.
- 6LAYER IT: grease a baking dish with oil, place a layer of fried potatoes on the bottom, then half the cooked meat on top, then another layer of potatoes, the rest of the meat, and finish with a final layer of potatoes.
- 7POUR THE TOPPING: pour the egg and sour cream mixture evenly over the dish, letting it seep down between the layers.
- 8SPRINKLE THE CHEESE: sprinkle the grated cheese evenly on top.
- 9BAKE: bake at 190°C for 40-45 minutes, until the topping has fully set and the surface is golden and slightly crisp.
- 10REST AND SERVE: let the musaca rest for 10-15 minutes before cutting it into squares, so the layers settle and the slices come out clean.
