Kaya Toast with Soft Eggs

Kaya toast emerged from the cultural encounter between Hainanese Chinese migrants and British colonial cuisine in 19th-20th century Malaya. Hainanese cooks, often employed as kitchen help in the households of colonizing British families, adapted the European egg-and-milk jam, replacing cow's milk with coconut milk and adding pandan leaves, the aromatic plant ubiquitous in Southeast Asian cuisine, thus creating kaya jam. The combination of kaya toast, cold butter and soft eggs served with soy sauce became the defining breakfast of Hainanese communities in Malaysia and Singapore, traditionally served in cafés called kopitiam, where elders gather in the morning for coffee and conversation. The ritual of dipping the toast into the soft yolk remains an almost sacred custom for many Malaysians, passed down through generations.

Ingredients 4 servings

  • 8 slices white bread
  • 150g kaya jam (coconut and egg)
  • 50g cold butter
  • 8 eggs
  • 4 tbsp sweet soy sauce (kecap manis)
  • Ground white pepper

How to make it

  1. 1TOAST BREAD: Toast the bread slices on a grill or in a toaster until crisp and lightly golden on both sides.
  2. 2SPREAD KAYA: Generously spread one side of each slice with kaya jam while the bread is still hot so the jam softens slightly.
  3. 3ADD BUTTER: Place a thin slice of cold butter directly on the kaya jam of one slice.
  4. 4ASSEMBLE SANDWICH: Cover with the second slice of bread, kaya side in, then cut diagonally in half.
  5. 5PREPARE EGGS: Boil the eggs in boiling water for exactly 5-6 minutes for a soft, runny yolk.
  6. 6CRACK EGGS: Crack each egg into a small bowl, sprinkle with sweet soy sauce and white pepper on top.
  7. 7SERVE: Serve the warm kaya toast alongside the soft eggs, dipping the toast in for a traditional breakfast.
