  • 3 tbsp red curry paste
  • 150ml thick coconut milk
  • 2 eggs
  • 3 tbsp chopped kaffir lime leaves
  • 1 tsp sugar
  • Salt
  • Banana leaves for wrapping
  • Toothpicks for securing

How to make it

  1. 1MINCE FISH: Mince the fish fillet very finely, almost to a paste, using a food processor or sharp knife.
  2. 2COMBINE: Combine the minced fish with the curry paste, coconut milk, eggs, chopped kaffir lime leaves, sugar and salt.
  3. 3BLEND: Mix well until you get a creamy, homogeneous mixture.
  4. 4PREPARE LEAVES: Pass the banana leaves quickly over a flame to make them more pliable and easy to fold.
  5. 5WRAP: Put a few spoonfuls of the mixture on each leaf, fold the edges and secure with toothpicks.
  6. 6GRILL: Grill the parcels over charcoal on medium heat, 15-20 minutes, turning occasionally, until the leaf browns and the mixture sets.
  7. 7SERVE: Serve hot, directly in the banana leaf, with white rice on the side.
