
Moroccan Couscous
Couscous is far more than a recipe across the Maghreb — it's the name of an entire meal, a cooking technique, and a social ritual. In Morocco, Friday couscous, cooked after midday prayers, is such an entrenched tradition that UNESCO recognized the practices around it as intangible cultural heritage, shared by Morocco, Algeria, Tunisia and Mauritania. The difference from Western "instant couscous," hydrated with just hot water, lies exactly in the repeated steaming technique: the grains are steamed two or three times over the simmering stew, fluffed by hand with oiled fingers between each round. This slow, meticulous process gives the grains a light, separate texture impossible to achieve through simple hydration — which is why Moroccan families consider instant couscous a completely different thing from the traditional one.

Ingredients 4 servings
- 500g medium-grain couscous
- 600g lamb shoulder, cut into large chunks
- 2 onions, chopped
- 3 carrots, cut into large chunks
- 2 turnips, cut into large chunks
- 300g pumpkin, cubed
- 2 zucchini, cut into large chunks
- 200g chickpeas, soaked overnight
- 4 tbsp olive oil
- 1 tsp ground ginger
- 1 tsp turmeric
- A pinch of saffron threads
- A bunch of cilantro and parsley, tied
- Salt and pepper, to taste
How to make it
- 1BUILD THE BASE: sauté the onion in olive oil at the bottom of a large pot, add the lamb, brown lightly on all sides.
- 2SEASON AND SIMMER: add the ginger, turmeric, saffron, salt, pepper, the drained chickpeas and the herb bunch, cover with water, simmer 45 minutes.
- 3ADD THE HARD VEGETABLES: add the carrots and turnips, simmer another 15-20 minutes.
- 4STEAM THE COUSCOUS: meanwhile, rub the couscous grains with a little oil and water, steam them over the simmering stew for 20 minutes, fluffing between steamings.
- 5ADD THE SOFT VEGETABLES: add the pumpkin and zucchini to the stew, simmer until all the vegetables are tender.
- 6STEAM AGAIN: steam the couscous a second time, until light and fluffy.
- 7ASSEMBLE: mound the couscous onto a platter, arrange the meat and vegetables on top, ladle the broth over.
- 8SERVE: serve hot, with extra broth on the side.
