
Vaca Frita
Vaca Frita, literally "fried cow", is a Cuban way of turning a tough, inexpensive cut like flank steak into a crisp, flavorful dish, using the same basic technique as Ropa Vieja: slow boiling, followed by shredding the meat with a fork. The difference between the two comes at the end — Ropa Vieja braises in tomato sauce, while Vaca Frita is fried dry, over high heat, until the edges of the shredded meat turn crisp. Marinating in lime juice, done only after the meat has already been shredded, is the step that changes everything: the acid penetrates directly into the exposed fibers, not just the surface, as it would with a whole piece. When fried, those same thin, separated fibers create far more contact surface with the hot pan than a classic steak would, which is why Vaca Frita ends up crisp and lightly charred in spots, without the inside drying out — the meat was already boiled tender, and frying only gives it its texture and color.

Ingredients 4 servings
- 600g flank steak
- 1 onion, halved, plus 1 onion thinly sliced for serving
- 2 bay leaves
- 4 garlic cloves (2 whole, 2 minced)
- Juice of 3 limes
- 3 tbsp vegetable oil
- 1 tsp ground cumin
- Salt and black pepper, to taste
- Fresh cilantro leaves, for serving
How to make it
- 1BOIL THE MEAT: put the meat in a pot with the halved onion, bay leaves, the 2 whole garlic cloves and enough water to cover, simmer 1.5 hours, until it shreds easily with a fork.
- 2SHRED THE MEAT: remove the meat, let it cool slightly, then shred it into thin strips with a fork, along the grain.
- 3MARINATE: place the shredded meat in a bowl, add the lime juice, minced garlic, cumin, salt and pepper, let marinate 15-20 minutes.
- 4FRY: heat the oil in a large pan over high heat, add the meat in a single layer, leave undisturbed for a few minutes, until the edges turn crisp and lightly charred.
- 5FINISH: toss briefly, cook 1-2 more minutes, then remove from heat.
- 6SERVE: place the meat on a platter, scatter the thinly sliced onion and fresh cilantro on top, serve immediately.
