Ingredients 4 servings

  • 1 cup fine semolina
  • 1/2 cup ghee
  • 1 1/2 cups water
  • 3/4 cup sugar
  • A few strands of saffron
  • 1/2 tsp ground cardamom
  • 2 tbsp chopped pistachios
  • 2 tbsp chopped almonds
  • 2 cups whole wheat flour
  • 1/2 tsp salt
  • Water, as needed for the dough
  • Oil, for frying the puri

How to make it

  1. 1KNEAD THE PURI DOUGH: Mix the whole wheat flour with salt and a little oil, then gradually add water and knead into a firm, elastic dough.
  2. 2Cover and let it rest 20 minutes.
  3. 3PREPARE THE SYRUP: In a small saucepan, boil the water with the sugar, saffron and cardamom, until the sugar fully dissolves; keep the syrup warm.
  4. 4TOAST THE SEMOLINA: Melt the ghee in a thick-bottomed pan, add the semolina and toast it over medium-low heat, stirring continuously, until golden and nutty-smelling, 8-10 minutes.
  5. 5Carefully pour the warm syrup over the semolina, stirring constantly — the mixture will sizzle and thicken quickly.
  6. 6COOK THE HALWA: Keep stirring over low heat until the halwa binds completely and pulls away from the sides of the pan, 3-4 minutes.
  7. 7ROLL OUT THE PURI: Divide the dough into small balls and roll each ball into a thin, round disc.
  8. 8HEAT THE OIL: Heat plenty of oil in a deep pan over medium-high heat.
  9. 9FRY THE PURI: Slip each dough disc into the hot oil and press gently with a slotted spoon — it will puff up like a balloon within seconds; remove it once golden on both sides.
  10. 10FINISH THE HALWA: Sprinkle the chopped pistachios and almonds over the warm halwa.
  11. 11SERVE: Serve the halwa immediately, alongside warm puri and, traditionally, spiced chickpeas (chana).
