Künefe

Künefe's origins are disputed between Turkey and the Levant, but the city of Hatay, in southern Turkey near the Syrian border, remains the most commonly cited birthplace of the dessert in its current form. The name of the cheese traditionally used, hatay peyniri, even bears the city's name, and authentic recipes insist that only this specific cheese, with its particular stretchy texture, produces the characteristic long strands when cut — regular mozzarella comes close, but rarely matches it. The unchanging rule of cold syrup over the hot dessert, never the reverse, has a purely technical basis: if warm syrup met kadayif that was already baked and crisp, it would soften it excessively fast, turning the crispness gained from baking into a soggy texture. Poured cold over the dessert just out of the oven, the syrup soaks in gradually, letting the top surface stay crisp even after the liquid has fully penetrated. Flipping the dessert before sweetening it, with the browned side on top, is equally important — it guarantees the first bite shows exactly the crispiest layer, not the smooth one underneath.

Ingredients 4 servings

  • 400g kadayif (shredded phyllo dough), thawed
  • 150g melted butter
  • 400g mozzarella or Turkish stretchy cheese (kaşar/hatay), grated
  • 400g sugar
  • 400ml water
  • 1 tsp lemon juice
  • Ground pistachios, for serving

How to make it

  1. 1PREPARE THE SYRUP: boil the sugar with the water over medium heat 10 minutes, add the lemon juice, let cool completely, ideally in the fridge.
  2. 2PREPARE THE KADAYIF: pull apart the kadayif strands finely by hand, mix well with the melted butter, until every strand is coated.
  3. 3DIVIDE AND FILL: place half the kadayif in a greased tray, press evenly, scatter the grated cheese on top, cover with the remaining kadayif, press down well.
  4. 4BAKE: bake at 190°C, 30-35 minutes, until the bottom turns golden-reddish (check by lifting a corner).
  5. 5FLIP: remove from the oven, flip immediately onto a platter, golden side up.
  6. 6POUR THE SYRUP: pour the cold syrup evenly over the hot dessert, let it soak in 10 minutes.
  7. 7SERVE: scatter ground pistachios on top, cut into slices and serve while warm, with the cheese still melted.
