
Pide
Pide has deep roots in Anatolian cuisine, serving for centuries as the everyday bread baked in communal village ovens, long before meat fillings became the popular restaurant version seen today. The elongated boat shape let the dough bake quickly and evenly, a practical solution for wood-fired ovens that reached very high temperatures. In large cities like Istanbul and Kayseri, pide makers specialized over generations, each region developing its own filling combinations, from plain cheese to minced meat or eggs. Today pide remains a social dish, often sliced and shared at the table, served hot straight from the oven alongside lemon wedges and hot peppers.
Boat shape, raised edges
The dough is stretched and folded at the edges into an elongated boat shape, holding the filling in while the rim browns.
Short bake, very high heat
It bakes for just a few minutes in a very hot oven, so the dough stays soft inside and crisp along the edges.
Spiced minced-meat filling
Minced meat mixed with onion, tomato and pepper forms a thin layer that cooks alongside the dough.
Melted kashar on top
A layer of Turkish kashar cheese melts over the filling, binding every bite together.
Ingredients 4 servings
- 500g flour
- 7g dry yeast
- 1 tsp salt
- 250ml warm water
- 2 tbsp olive oil
- 300g ground beef
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 green pepper, chopped
How to make it
- 1Mix the yeast and warm water in a bowl and let it foam for a few minutes.
- 2Add the flour, salt and olive oil, then knead until you get an elastic dough.
- 3Let the dough rise covered for an hour, until it doubles in size.
- 4Separately mix the ground beef with the onion, tomatoes and pepper, seasoning to taste.
- 5Divide the dough into four pieces, stretch each into an elongated shape and fold the edges up to form a boat.
- 6Fill each piece with the meat mixture, pressing gently toward the edges.
- 7Bake in a very hot oven for ten to twelve minutes, until the edges brown and the meat is cooked through.
