Shkmeruli

Shkmeruli takes its name from the mountain village of Shkmeri in the Racha region, where it's said a local cook first pan-fried chicken and finished it in a sauce built almost entirely on garlic and milk. What began as a regional specialty spread across Georgia and became one of the country's most requested restaurant dishes, ordered as often for the sauce as for the chicken itself. The technique of pressing the chicken flat in the pan, sometimes under a brick or a second skillet, is what gives shkmeruli its crisp, deeply browned skin, a method shared with dishes like Italian chicken al mattone. The sauce is deliberately simple: garlic cooked gently in butter so it never turns bitter, then loosened with milk or cream until it pools around the chicken. Restaurants often serve it still bubbling in a clay pot, with extra bread on the side specifically so nothing goes to waste on the plate.

Ingredients 4 servings

  • 1 whole chicken (about 1.2kg), spatchcocked or cut into pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp vegetable oil
  • 40g butter
  • 1 whole head of garlic, cloves peeled and minced
  • 300ml milk or single cream
  • 1 tbsp fresh coriander or parsley, chopped
  • Pinch of ground chili flakes, optional

How to make it

  1. 1Season the chicken pieces all over with salt and pepper.
  2. 2Heat the oil in a wide, heavy skillet and fry the chicken skin-side down, pressing it flat with a heavy lid or another pan.
  3. 3Cook for about 10 minutes until the skin is deeply golden and crisp, then flip and cook the other side the same way.
  4. 4Remove the chicken once cooked through and set aside, keeping the pan drippings in place.
  5. 5Melt the butter in the same pan, add the garlic, and cook gently for about a minute until fragrant but not browned.
  6. 6Pour in the milk, scraping up the browned bits, and simmer for a few minutes until slightly thickened.
  7. 7Return the chicken to the pan, spoon the garlic sauce over it, and simmer briefly before serving scattered with coriander.
