Alheira de Mirandela

Alheira is a Portuguese sausage born of necessity and resilience. It's said that forcibly converted Sephardic Jews from northern Portugal, particularly Mirandela and Trás-os-Montes, created this sausage in the 15th-16th centuries to avoid the suspicions of the Inquisition, which targeted families who refused to eat pork. Stuffed with bread, chicken, duck and spices, alheira looked like an ordinary pork sausage, allowing families to go unnoticed while quietly maintaining their own traditions. Today alheira is a staple across Portugal, usually served fried and paired with a fried egg, chips and kale. Its texture differs from classic sausages — softer, airier — but its smoky, spiced flavor has won over generations. The recipe remains a quiet tribute to the ingenuity of those who turned fear into a lasting culinary tradition.

  • 4 eggs
  • 500g potatoes
  • 2 tbsp olive oil
  • 1 bunch kale
  • 2 garlic cloves
  • 1 lemon (juiced)
  • Salt
  • Black pepper
  • 2 bay leaves
  • Sweet paprika
  • Oil for frying the potatoes

How to make it

  1. 1PREPARE POTATOES: Peel and cube the potatoes, fry them in hot oil until golden and crisp.
  2. 2BOIL KALE: Boil the kale in salted water with bay leaves for 5 minutes, then drain.
  3. 3SAUTÉ GARLIC: Sauté the crushed garlic in olive oil, add the boiled kale and sauté for 2 minutes.
  4. 4FRY SAUSAGES: Slice the alheira sausages lengthwise and pan-fry over medium heat until the casing turns crisp and golden.
  5. 5FRY EGGS: Fry the eggs sunny-side up in the same pan, with crispy edges.
  6. 6ASSEMBLE: Arrange the potatoes and kale on the plate, top with the sausages and the egg.
  7. 7FINISH: Drizzle with lemon juice and sprinkle with sweet paprika before serving.
