- 500 g fresh strawberries
- 3 tbsp icing sugar
- 1 tsp lemon juice
- 300 ml double cream
- 150 g baked meringues, bought or homemade
- 1 tsp vanilla extract
- 1 tbsp caster sugar for the cream
- A few mint leaves to garnish
- A pinch of salt
How to make it
- 1Wash and hull the strawberries, then cut into small pieces, keeping a few whole for garnish.
- 2Place half the strawberries in a bowl with icing sugar and lemon juice and lightly crush them with a fork, leaving a chunky texture.
- 3Whip the cream with caster sugar and vanilla extract until soft peaks form, without over-whipping it.
- 4Crumble the meringues by hand into uneven pieces, some larger, some smaller, for varied texture.
- 5Add the crushed strawberries over the whipped cream and fold gently, only a few times, without fully combining.
- 6Fold in the crumbled meringue and the remaining chopped strawberries, keeping the characteristic messy look.
- 7Divide into individual bowls, garnish with mint leaves and serve immediately, while the meringue is still crisp.
