  • 2 tbsp sugar
  • 2 cloves garlic and 2 red chilies, pounded
  • 50g roasted peanuts, crushed, and Vietnamese coriander leaves, for topping

How to make it

  1. 1Peel and shred the green papaya into long, thin threads, either with a special shredder or a coarse grater.
  2. 2Shred the carrots the same way and toss them together with the papaya in a large bowl.
  3. 3Pound the garlic and chilies in a mortar until roughly crushed, then add the sugar and pound briefly until it starts to dissolve.
  4. 4Stir in the fish sauce and lime juice, tasting and adjusting until the dressing is sharply sour, salty, and sweet all at once.
