Aloo Gobi

Aloo gobi is one of those home dishes without a single moment of invention, taking shape gradually in North Indian kitchens once the potato, brought by the Portuguese in the sixteenth century, met the cauliflower, introduced by the British in the mid-nineteenth century. The pairing of the two vegetables, cooked dry with turmeric and cumin, quickly became an everyday recipe, precisely because it relied on cheap ingredients easily found at any market. Unlike the rich, thick-gravied curries, aloo gobi remains a simple, almost dry dish meant to come together quickly and without much fuss, which is why it turns up so often in lunchboxes carried to school or work. It remains one of the first vegetable dishes many Indian children learn at home, a modest but deeply familiar dish that ties everyday meals back to a mother's or grandmother's kitchen.

Dry-cooked, no gravy

Potatoes and cauliflower cook together with almost no water and no sauce, so each piece stays firm and well seasoned.

🟡

Golden from turmeric

Turmeric and cumin give the vegetables a golden color and earthy aroma without masking the natural taste of the potato and cauliflower.
