Fattoush

Fattoush belongs to the broader category of fattet dishes, meals that reuse dry or stale bread, an old and efficient practice for avoiding food waste in Levantine kitchens. The name derives from the Arabic word fatt, meaning to break or crumble, referring directly to how the flatbread is torn by hand into irregular pieces. What sets fattoush apart from other similar salads in the region is the use of sumac, a red-purple spice with a tart taste extracted from the berries of a wild shrub, a traditional alternative to lemon in periods when citrus wasn't readily available. While some modern recipes include tomatoes after their arrival from the New World, older versions relied exclusively on traditional Levantine vegetables and sumac for acidity.

  • 2 Lebanese flatbreads
  • 2 cucumbers
  • 3 tomatoes
  • 5 radishes
  • 1 romaine lettuce
  • 4 green onions
  • 1 bunch parsley
  • 1 bunch mint
  • 2 tbsp sumac
  • 100ml olive oil
  • Juice of 2 lemons
  • 1 tbsp pomegranate molasses
  • Oil for frying

How to make it

  1. 1FRY BREAD: Cut the flatbread into irregular pieces and fry them in hot oil until crisp and golden, or bake them in the oven.
  2. 2CHOP VEGETABLES: Dice the cucumbers, tomatoes, radishes and romaine lettuce into small pieces.
  3. 3CHOP HERBS: Finely chop the green onion, parsley and mint.
  4. 4MAKE DRESSING: Mix the olive oil with lemon juice, sumac and pomegranate molasses in a separate bowl.
  5. 5COMBINE: Mix all the chopped vegetables in a large bowl, add the dressing and mix well.
  6. 6ADD BREAD: Add the fried bread pieces right before serving, to keep them crisp.
  7. 7SERVE: Serve immediately, sprinkled with extra sumac on top.
