Ingredients 4 servings
- 200g plain flour
- 2 tsp baking powder
- 1 tbsp sugar
- 1/2 tsp salt
- 240ml whole milk
- 2 large eggs
- 30g melted butter, plus extra for the pan
- 1 tsp vanilla extract
How to make it
- 1In a large bowl, whisk together flour, baking powder, sugar and salt.
- 2In a second bowl, whisk milk, eggs, melted butter and vanilla.
- 3Pour the wet ingredients into the dry and fold gently with a spatula — a few lumps are fine and even desirable; over-mixing develops gluten and makes the pancakes tough.
- 4Rest the batter 5 minutes: the baking powder bubbles will rise to the surface.
- 5Heat a non-stick pan over medium heat, add a small knob of butter and wipe away the excess.
- 6Pour one ladle (about 80ml) of batter per pancake.
- 7Cook 2-3 minutes until bubbles break on the surface and the edges look set and dry.
- 8Flip and cook 1-2 minutes more until golden on the underside.
