  • 240ml whole milk
  • 2 large eggs
  • 30g melted butter, plus extra for the pan

How to make it

  1. 1In a large bowl, whisk together flour, baking powder, sugar and salt.
  2. 2In a second bowl, whisk milk, eggs, melted butter and vanilla.
  3. 3Pour the wet ingredients into the dry and fold gently with a spatula — a few lumps are fine and even desirable; over-mixing develops gluten and makes the pancakes tough.
