Saganaki

Saganaki takes its name not from the dish itself but from the two-handled frying pan, the sagani, in which it is traditionally cooked and served straight to the table. Firm, salty cheeses like kefalotyri or graviera hold their shape beautifully under high heat, developing a crisp golden crust while the inside turns soft and molten. The technique is deceptively simple, yet the timing is everything: too little heat and the cheese never crusts, too much and it collapses into the pan. The dish has become a fixture of Greek taverna culture, often arriving at the table with a flourish when a splash of brandy is set alight for a smoky, showman's finish called saganaki flambé. A squeeze of lemon at the last moment cuts through the richness and wakes up the salty cheese, turning a simple fried appetizer into one of the most recognizable starters of Greek cuisine. It is almost always shared, torn apart with pieces of bread rather than eaten with a knife and fork.

Ingredients 4 servings

  • 300g kefalotyri or graviera cheese, sliced thick
  • 3 tablespoons all-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon brandy or Metaxa (optional, for flaming)
  • Freshly cracked black pepper
  • 1 tablespoon water, for dredging the cheese
  • Crusty bread, for serving

How to make it

  1. 1Start by cutting the kefalotyri cheese into thick slabs about two centimeters high.
  2. 2Dip each slice briefly in cold water, then dredge it thoroughly in flour, pressing gently so the coating sticks on both sides.
  3. 3Heat the olive oil in a heavy skillet over medium-high heat until it shimmers.
  4. 4Lay the floured cheese in the hot oil and fry for about ninety seconds per side, until a deep golden crust forms and the edges just begin to soften.
  5. 5Resist the urge to flip it too soon, since the crust needs a moment to set before it will release cleanly from the pan.
  6. 6Transfer the cheese immediately to a warm plate and squeeze fresh lemon juice over the top while it still sizzles.
  7. 7Finish with a scattering of oregano and cracked black pepper, then serve at once with crusty bread to catch the melted center.
