
Zeeuwse Mosselen
Zeeuwse mosselen rely on the cold waters of Zeeland province in the southwest Netherlands, where the mix of salty North Sea water and fresh river water creates ideal conditions for mussel farming. The region's mussel-farming industry dates back centuries, and the town of Yerseke remains the Netherlands' mussel trading hub today. Mussel season, traditionally running from September to March, is marked by a popular event called «mosselfeest», the mussel festival, where the first mussels of the new season are opened and celebrated. The unwritten rule of the dish is simple but sacred among the Dutch: if a mussel stays completely closed after cooking, it is never eaten.

The mussels come exclusively from the cold, salty waters of Zeeland province, known for their size and sweet taste.
Steamed in beer or white wine
The mussels steam quickly in a liquid based on pale beer or white wine, with aromatic vegetables, never just water.

- 2kg fresh Zeeland mussels
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, crushed
- 250ml pale beer or white wine
- 2 bay leaves
- Fresh parsley, chopped
- Ground pepper
- Mayonnaise, for serving
How to make it
- 1Clean the mussels under cold water, removing any beard and discarding any that stay open when lightly tapped.
- 2Sauté the onion, celery and garlic in a large pot for five minutes, until slightly softened.
- 3Pour in the beer or white wine and add the bay leaves, bringing to a boil over high heat.
- 4Add all the mussels at once, cover the pot immediately and cook for five to seven minutes, shaking the pot occasionally.
- 5Check that all the shells have opened, discarding any mussel that stays closed after cooking.
- 6Sprinkle fresh chopped parsley and ground pepper on top right before serving.
- 7Serve straight from the cooking pot, hot, alongside fried potatoes and mayonnaise for dunking.
