  • 400g dried kidney beans, soaked overnight
  • 200g smoked pork knuckle or bacon, diced
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 parsley root or parsnip, diced
  • 2 tbsp sweet paprika
  • 2 garlic cloves, minced
  • 150g csipetke (pinched egg noodles)
  • 200ml sour cream and a splash of vinegar, to finish

How to make it

  1. 1Drain the beans that have soaked overnight, cover them with fresh water, and bring to a boil with the diced smoked pork.
  2. 2Skim off any foam that rises, then lower the heat and let the beans simmer gently for about an hour, until they start to soften.
  3. 3Add the chopped onion, diced carrot, and parsley root, and continue simmering until both the beans and vegetables are tender.
  4. 4In a small pan, warm a little oil, stir in the sweet paprika and minced garlic off the heat, then spoon this fragrant mixture into the pot to deepen the color and flavor.
  5. 5Meanwhile, make the csipetke dough from flour, egg, and a pinch of salt, then pinch off small irregular pieces with your fingers.
  6. 6Drop the pinched dough pieces directly into the simmering soup and cook until they float to the surface and are fully cooked through.
  7. 7Season with salt to taste, stir in a swirl of sour cream and a splash of vinegar just before serving, and ladle the soup hot into bowls.
