
Halászlé
Halászlé, or fisherman's soup, is one of the oldest dishes in Hungarian cuisine, rooted in the fishing communities that worked along the Danube and Tisza rivers. Every region has its own version — from Szeged to Baja — but all share the same core idea: an intensely red paprika broth made from freshwater fish slowly simmered with head and bones for texture and flavor. Unlike many Western fish soups, halászlé contains no thickening vegetables like potatoes or flour — its color and body come entirely from paprika and the fish's own natural collagen. It's a festive dish, traditionally cooked in large cauldrons over open fire, especially at Christmas or at riverside community gatherings.

Ingredients 4 servings
- 1kg carp (or mixed freshwater fish)
- 500g fish head and bones
- 3 large onions
- 4 tbsp sweet paprika
- 1 tbsp hot paprika
- 2 tomatoes
- 1 bell pepper
- Salt
- 1 liter water
- Fresh hot pepper (optional)
- Fresh bread for serving
How to make it
- 1PREPARE BROTH: Boil the fish head and bones with one onion and salt for 45 minutes, then strain.
- 2SAUTÉ ONION: Finely chop the remaining onions and soften them gently in a little water, without browning.
- 3ADD PAPRIKA: Remove the pot from heat and stir in the sweet and hot paprika quickly so it doesn't burn.
- 4SIMMER VEGETABLES: Add the diced tomatoes and bell pepper, pour in the strained broth, and simmer for 20 minutes.
- 5ADD FISH: Add the cleaned carp pieces and simmer for another 20 minutes on low heat, without stirring with a spoon so the fish doesn't fall apart.
- 6SEASON: Taste and adjust salt and heat with fresh chopped hot pepper.
- 7SERVE: Serve hot, with fresh bread on the side.
