Bourekas

Bourekas arrived in Israel with Sephardic Jews from Turkey and the Balkans, who brought with them the Balkan and Ottoman tradition of filled puff pastries, known in various forms throughout the eastern Mediterranean region. Once they reached the Israeli market, these pastries were quickly adopted and adapted by the whole population, becoming a fundamental dish crossing community lines. The triangular shape of the pastry is no accident — in many traditional Israeli bakeries, each geometric shape signals a different filling type, an informal visual labelling system that helps hurried customers quickly identify the desired contents without asking. Bourekas remain an extremely popular everyday snack, sold at almost every bakery and street kiosk, often served for breakfast or as an afternoon snack alongside a boiled egg and pickles.

Ingredients 4 servings

  • 500 g puff pastry
  • 250 g feta cheese, crumbled
  • 100 g cottage cheese
  • 2 large eggs
  • 1 tbsp chopped parsley
  • 1 egg, beaten, for brushing
  • 2 tbsp sesame seeds
  • Salt and black pepper
  • Flour for dusting

How to make it

  1. 1Mix the crumbled feta cheese with the cottage cheese, one egg and the chopped parsley in a bowl, seasoning with salt and pepper to taste, keeping in mind that feta is already salty.
  2. 2Roll out the puff pastry on a floured surface and cut into squares of about 12 cm.
  3. 3Place a spoonful of cheese filling in the centre of each square, being careful not to overload the edges.
  4. 4Fold each square diagonally to form a triangle, and press the edges firmly with a fork to seal them tightly.
  5. 5Place the bourekas on a tray lined with baking paper, spaced apart.
  6. 6Brush the surface of each pastry with beaten egg and generously sprinkle with sesame seeds.
  7. 7Bake at 190°C for 20-25 minutes, until golden and crisp, then serve warm or at room temperature.
