
Chili con carne
Chili con carne is more Texan than Mexican — the dish was popularized in San Antonio in the nineteenth century by street vendors known as the chili queens, who sold it from stands in the city's plazas. The name is Spanish for pepper with meat, but the recipe as it evolved in Texas became something distinct: a cattle-country stew built on dried chillies and beef. Texas-style chili traditionally contains no beans; their inclusion is a point of contention. The chipotle — a smoked, dried jalapeño — delivers heat with a wood-smoke undertone that defines the profile. Cumin is the other key spice, used more heavily here than in most Mexican cooking. The meat cooks slowly enough that it breaks down into the sauce, thickened by the beans and the reduction of the braising liquid.

Ingredients 4 servings
- 500g beef mince (min. 20% fat)
- 400g canned red kidney beans, drained
- 400g canned chopped tomatoes
- 2 large onions, chopped
- 3 garlic cloves, minced
- 2 tbsp chipotle paste or 2 dried chipotle chillies, rehydrated
- 1 tbsp ground cumin and 1 tbsp smoked paprika
- 2 tbsp vegetable oil
- Salt and black pepper
How to make it
- 1Heat the oil in a large pot over high heat.
- 2Brown the mince in two batches, breaking it up well — you want small caramelised pieces, not a grey steamed mass.
- 3Remove the meat and in the same oil, saute the onion for 8 minutes.
- 4Add garlic, cumin and smoked paprika, stir for 1 minute.
- 5Add chipotle paste, canned tomatoes, drained beans, the browned meat and 200ml water.
- 6Bring to a boil, reduce to low, partially cover and simmer 45-60 minutes, stirring occasionally.
- 7Chili should be thick, not watery — uncover for the last 15 minutes if too thin.
- 8Taste and adjust salt.
- 9Serve in bowls with sour cream, grated cheddar, sliced jalapeños, fresh coriander and tortilla chips.
