
Molokhia
Molokhia has a history of thousands of years in Egypt, with references dating back to the pharaonic period, though its current name comes from Arabic and literally means of kings, likely reflecting its status as a royal dish in the early Islamic period. The jute plant, whose leaves are used, grows easily along the Nile, which made it accessible to all social classes throughout history. The soup's mucilaginous texture, similar to American gumbo, often splits Egyptians into two camps — those who love it and those who avoid this characteristic. The technique of frying the garlic and coriander separately, called taklia, and adding it hot directly to the soup right before serving is essential — many cooks consider this final step to define the difference between a mediocre and an excellent molokhia.

Ingredients 4 servings
- 500g finely chopped jute leaves (fresh or frozen)
- 1 liter chicken broth
- 6 garlic cloves, minced
- 2 tbsp clarified butter
- 1 tsp ground coriander
- Salt, pepper
- Juice of 1 lemon
- Egyptian bread or rice for serving
How to make it
- 1BOIL BROTH: Bring the chicken broth to a boil in a large pot.
- 2ADD LEAVES: Add the chopped jute leaves to the boiling broth, stirring well so they don't clump.
- 3SIMMER SOUP: Simmer over medium heat for 10-15 minutes, stirring occasionally, until the soup thickens slightly.
- 4SEASON: Add salt and pepper, taste and adjust.
- 5PREPARE TAKLIA: In a separate pan, fry the minced garlic in clarified butter until golden, add the ground coriander right before removing from heat.
- 6STIR IN TAKLIA: Pour the garlic and coriander mixture directly into the soup, stirring quickly — this step gives molokhia its signature aroma.
- 7SERVE: Serve hot, with lemon juice drizzled on top, alongside white rice or Egyptian bread.
