Basbousa

Basbousa is a syrup-soaked semolina dessert found across Egypt and the Levant, known under different names like "harissa" (not to be confused with the chili paste) or "nammoura" depending on the region. The name "basbousa" likely comes from a colloquial word suggesting pleasant sweetness, and written recipes date to the Ottoman period, though semolina cakes sweetened with honey or syrup were known in medieval Arab cuisine long before. In Egypt, basbousa appears at almost every celebration, from Ramadan to weddings, cut into neat diamonds with an almond set in the center of each piece. The coconut version, the most popular today, spread relatively recently as shredded coconut became a common ingredient in urban bakeries; many families, however, still keep the plain version, made with just semolina and syrup, as a base recipe passed down through generations.

Ingredients 4 servings

  • 2 cups fine semolina
  • 1/2 cup shredded coconut
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1 cup full-fat yogurt
  • 1/2 cup melted butter
  • 1 cup sugar (for syrup)
  • 1/2 cup water
  • 1 tbsp orange blossom water
  • 1 tsp lemon juice
  • 16 whole blanched almonds

How to make it

  1. 1MIX: Combine semolina, coconut, sugar and baking powder in a large bowl.
  2. 2ADD MOISTURE: Fold in the yogurt and melted butter, stirring until a soft, even dough forms.
  3. 3REST: Cover and let the dough rest 20 minutes so the semolina absorbs the liquid.
  4. 4SPREAD: Press the dough evenly into a greased baking tray, about 2 cm thick.
  5. 5SCORE: Cut the dough into diamonds with a knife, without cutting all the way through; place one almond in the center of each piece.
  6. 6BAKE: Bake at 180°C for 30-35 minutes, until nicely golden on top.
  7. 7MAKE THE SYRUP: While it bakes, simmer sugar and water for 5 minutes, then stir in orange blossom water and lemon juice.
  8. 8POUR: Pour the warm syrup over the hot cake as soon as it comes out of the oven, and let it soak in fully before serving.
