Štrukli

Štrukli originates from the Zagorje region of northern Croatia, where it was long a family dish passed down through generations, prepared mainly for holidays and Sundays. The technique of stretching the dough almost transparent links the dish to the Central European strudel tradition, a legacy of Austrian influence on Croatian cuisine. In 2007, the Croatian ministry of culture declared štrukli part of the country's intangible cultural heritage, and the dish now appears on restaurant menus across Croatia, both in baked savoury versions and in sweet variants filled with jam or walnuts.

  • 1 egg
  • 150ml lukewarm water
  • 1 tbsp oil
  • 1/2 tsp salt
  • 600g fresh cottage cheese
  • 200ml full-fat sour cream
  • 2 eggs
  • Salt, for the filling

How to make it

  1. 1Knead the flour with the egg, lukewarm water, oil, and salt until you get a smooth, elastic dough.
  2. 2Cover the dough and let it rest for at least 30 minutes at room temperature.
  3. 3Mix the fresh cottage cheese with the sour cream, eggs, and salt until you get a creamy filling.
  4. 4Stretch the dough over a clean tablecloth, pulling it by hand until it's nearly transparent.
  5. 5Spread the cheese filling evenly over the whole surface of the dough.
  6. 6Roll the dough up tightly using the tablecloth for support, then cut into pieces and place in a greased dish, topped with sour cream.
  7. 7Bake until golden on top, then serve warm.
