
Bún Riêu
Bún riêu began as a humble dish of the Red River Delta, built around the small freshwater crabs that farmers pulled from flooded rice paddies. Their meat and roe were pounded into a paste that, when gently warmed in broth, breaks apart into soft curds rather than staying smooth, giving the soup a texture unlike any other Vietnamese noodle dish. Unlike the beef- or pork-based broths that dominate the country's noodle soups, bún riêu leans on crab and tomato for its base, producing a broth that is lighter, tangier, and closer to sweet-sour than deeply savory. As the dish spread south, cooks added their own touches: fried tofu, congealed pork blood, and a spoonful of fermented shrimp paste became common southern additions, while northern versions stay closer to the original, sparer recipe. Because the crab curds are best eaten fresh, street vendors still make a new batch of broth every morning, and bún riêu remains one of the few Vietnamese noodle soups whose color and depth come from tomato and crab rather than from hours of simmered bone.
Crab curd, not bones, builds the broth
Field-crab paste is gently heated until its proteins set into soft curds that float to the top, giving the broth its body instead of hours of simmered bones.
Tomato for sweetness and color
Ripe tomatoes collapse in hot annatto oil, turning the broth a warm red-orange and adding a natural sweetness that balances the crab.
The curd is ladled, never stirred
Once the crab mixture is added, the pot is left undisturbed so the curd holds together in soft, spoonable pieces.
Raw greens added at the table
Shredded banana blossom, perilla, and bean sprouts go in only after serving, keeping their crunch against the hot broth.

- 300g fresh field-crab paste (or canned crab meat mixed with crab roe paste)
- 400g dried thin rice vermicelli (bún)
- 4 ripe tomatoes, cut into wedges
- 150g ground pork
- 2 shallots, finely chopped
- 2 tbsp annatto oil
- 2 tsp fermented shrimp paste (mắm tôm)
- 200g soft tofu, cubed and fried until golden
- Bean sprouts, shredded banana blossom, perilla leaves and lime wedges, to serve
How to make it
- 1Beat an egg into the crab paste with a pinch of salt and set the mixture aside.
- 2Heat annatto oil in a large pot and sauté the shallots until fragrant.
- 3Add the tomato wedges and cook until they soften and release their juices.
- 4Pour in water, bring to a simmer, and season with fish sauce, fermented shrimp paste, and a little sugar.
- 5Spoon the crab mixture gently into the pot without stirring, letting it set into soft curds as it cooks.
- 6Add the fried tofu and let the broth simmer for a few more minutes.
- 7Blanch the rice vermicelli, divide it among bowls, ladle the broth and toppings over, and finish with bean sprouts, herbs, and lime.
