
Humita
Humita descends from a corn-based paste eaten across the Andes since pre-Columbian times, when Quechua and Aymara communities ground fresh corn with stones and cooked it slowly over embers, long before the arrival of dairy cattle or European seasonings. In northern Argentina, particularly the provinces of Salta and Jujuy, the dish absorbed Spanish colonial additions — onion, cheese, milk — while keeping its base technique of grinding sweet corn into a coarse, starchy purée. Humita is prepared two ways: "en olla," a spoonable stew eaten straight from the pot, or "en chala," wrapped and tied in the corn's own husks and steamed like a tamale. Either way it appears at family tables during the late-summer corn harvest, when ears are at their sweetest, and remains one of the clearest culinary threads connecting modern Argentina to its indigenous Andean roots.

- 6 ears fresh corn, kernels removed
- 1 onion, finely chopped
- 2 tomatoes, peeled and diced
- 1 tbsp sweet paprika
- 1/2 cup whole milk
- 150g soft cheese, cubed
- 2 tbsp butter
- 1 pinch sugar
- Corn husks for wrapping
How to make it
- 1PREPARE THE CORN: Cut the kernels from the cobs and blend half of them into a coarse purée.
- 2SAUTÉ THE BASE: Cook the onion and tomato in butter until softened, then stir in the paprika.
- 3ADD THE CORN: Add the whole and puréed corn kernels to the pan and mix well with the vegetables.
- 4SIMMER WITH MILK: Pour in the milk and simmer over low heat, stirring often so the mixture doesn't stick.
- 5MELT IN THE CHEESE: Add the cubed cheese and a pinch of sugar, stirring until the cheese melts through.
- 6THICKEN THE MIXTURE: Keep cooking gently until the humita thickens into a creamy, spoonable stew.
- 7SERVE IN HUSKS: Spoon the mixture into corn husks or bowls and serve warm right away.
