Unlike khachapuri, its cheese-filled cousin from the lowlands, kubdari is built entirely around meat, making it a dense, filling bread that could sustain shepherds and travelers through long, cold journeys. The defining flavor comes from Svan salt, a coarse blend of garlic, coriander, dill, and other dried herbs that Svan households have mixed by hand for generations, each family guarding its own ratio. The dough is rolled thin, filled generously, then sealed and flattened by hand so the meat cooks through evenly without drying out. A good kubdari should crackle slightly when torn open, releasing a burst of steam and garlicky meat juice that make it worth the walk up into the mountains to find.

Ingredients 4 servings

  • 500g plain flour, plus extra for dusting
  • 7g instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 280ml warm water
  • 2 tbsp vegetable oil
  • 500g minced beef or pork, or a mix
  • 2 onions, very finely chopped
  • 1 tbsp Svan salt (garlic and herb spice blend), or 3 minced garlic cloves with paprika and dried coriander

How to make it

  1. 1Mix the flour, yeast, sugar, and salt in a bowl, then stir in the warm water and oil to form a soft dough.
  2. 2Knead the dough for about 8 minutes until smooth and elastic, then cover and let it rise for an hour until doubled.
  3. 3Meanwhile, combine the minced meat, onions, and Svan salt in a bowl, mixing well so the seasoning is evenly distributed.
  4. 4Divide the risen dough into four balls and roll each one out into a thin round.
  5. 5Spoon a portion of the meat filling into the center of each round, then gather the edges up and pinch them together to seal.
  6. 6Flip the sealed parcel over and gently flatten it with your hands into a wide disc, taking care not to tear the dough.
  7. 7Bake on a hot, dry skillet or in a very hot oven until the crust is golden brown and blistered on both sides.
