Ma'amoul

Ma'amoul has a history of over 1000 years and is considered by many culinary historians to be the precursor that inspired many other stuffed sweets in the region. The cookie is closely tied to religious holidays in Lebanon, made by Christians for Easter and by Muslims for Eid al-Fitr alike, a rare example of a shared culinary tradition between the country's two major religious communities. The wooden molds used to stamp decorative patterns onto each cookie's surface are often passed down through generations, some families keeping them for hundreds of years. The stamped pattern isn't purely decorative — traditionally, the shape and design also indicate the type of filling inside, so someone familiar with the tradition can distinguish date-filled ma'amoul from those with walnuts or pistachios just by looking at the exterior.

  • 500g fine semolina
  • 250g melted butter
  • 100ml rosewater
  • 1 tsp dry yeast
  • 50ml warm milk
  • 1 tsp sugar
  • 300g pitted dates
  • 1 tsp cinnamon
  • A pinch of nutmeg
  • Powdered sugar for decoration

How to make it

  1. 1PREPARE DOUGH: Mix the semolina with the melted butter, rubbing well with your hands until fully absorbed.
  2. 2REST: Cover the dough and let it rest at room temperature for at least 4 hours, ideally overnight.
  3. 3ACTIVATE YEAST: Dissolve the yeast and sugar in the warm milk, let sit for 10 minutes.
  4. 4FINISH DOUGH: Add the activated yeast and rosewater to the semolina, knead gently until smooth and pliable.
  5. 5MAKE FILLING: Finely chop the dates, mix with cinnamon and nutmeg until a dense paste forms.
  6. 6SHAPE: Take pieces of dough, form an indentation, fill with date paste and seal well, press into the decorative wooden mold.
  7. 7BAKE: Bake at 180°C for 15-20 minutes, until the base turns lightly golden, without browning too much.
  8. 8FINISH: Let cool completely, then dust generously with powdered sugar before serving.
