  • 1 egg
  • 250ml warm water
  • 1 tsp salt
  • 1 tbsp sugar
  • 100g clarified butter (ghee)
  • Oil for stretching the dough

How to make it

  3. 3FORM BALLS: Divide the dough into 8 equal balls, coat them well with oil and let them rest for at least 4 hours, covered.
  4. 4STRETCH: Stretch each ball very thin on an oiled surface, almost transparent.
  5. 5FOLD: Fold the stretched dough into layers, forming a compact square or rectangle.
  6. 6FRY: Fry each roti on a ghee-greased griddle over medium heat, 2-3 minutes per side, until golden and crisp.
  7. 7CRUMPLE AND SERVE: Gently crumple the roti with your hands to reveal the layers, serve hot with curry sauce.
